Holland America Line Reimagines the Chef’s Table

Holland America Line is reimagining the Chef’s Table. The new experience is called Koningstafel, Dutch for “King’s Table”, and brings together galley access with a multi-course feast. 

“Koningstafel is more than a meal — it’s a celebration of craftsmanship, artistry and connection,” said Michael Stendebach, vice president of food, beverage and rooms division for Holland America Line. “Our chefs are the heart and soul of our culinary program, and this experience offers guests a rare opportunity to step into their world, witness their creativity firsthand and savor the results in an unforgettable setting. The name adds a distinctive touch that reflects our heritage while highlighting the elevated nature of the evening.”

The evening begins with a private pre-dinner cocktail reception in the Ocean Bar, followed by an exclusive galley tour led by the ship’s executive chef. Guests will then be seated in the Dining Room and experience a six-course meal which has been prepared from scratch using fresh, local ingredients. Each dish will be presented by the chef and paired with a curated wine selection. Koningstafel Chef’s Table reservations can be made online and cost $149 per person plus gratuities. 

In the near future, guests on cruises lasting 14 days or more will experience other culinary highlights. Guests on Baltic sailings will enjoy Rijsttafel Dinner, a Dutch-Indonesian tasting experience in Tamarind. Those crossing the South Pacific will experience Tiki Dinner, a tropical-themed evening at the Pinnacle Grill. Lastly, exclusive to Legendary Voyages is the Indian Pop-Up Menu, a rotating pop-up that features Indian specialties. Additionally, Indian menus are being offered fleetwide. 

Koningstafel debuted on Oosterdam in July and will be available on cruises 14 days and longer aboard Westerdam, Zaandam and Volendam this fall. The experience will be available fleetwide by spring 2026.
